Burrito Bowl Recipe

Look at me, I am posting something that isn’t breakfast, isn’t a dessert, isn’t covered in peanut butter and actually resembles a proper meal? Shocking, I know.

This recipe is my new obsession and I love meal prepping it for work at the moment

BURRITO BOWL

Ingredients:

Red onion, garlic

Lean beef mince

Rice

Beans

Veg

Greens 

Spices

Salsa

Coriander

Instructions:

  • Sautee red onion
  • Add fresh garlic
  • Add lean beef
  • Add beans of choice (cannelini, red kidney, chickpeas…)
  • Add veg of choice (pumpkin, courgette, peppers, tomatoes…)
  • Add greens of choice (spinach or kale)
  • Add salsa / taco sauce / canned tomatoes
  • Add spices (salt and pepper, cumin, garlic, moroccan spice, cinnamon, chipotle)
  • Add a little bit of water and let it simmer for a few minutes
  • Make rice
  • Put in a bowl and cover with fresh tomatoes, red onion, coriander
  • Add natural yoghurt on top or sour cream if you’re naughty like that
  • A side of a few tortilla chips would work perfectly too but I don’t know about you, I ain’t got any self-control around tortilla chips, so I’d rather not take that risk, lol
